The cooking in restaurants in Britain has been shaped largely
by traditions established by thc work of certain key
professional chefs, whose commis and trainees have
tempcred the skills of their masters with inspired directions of
their own. Likewise, a band of gifted amatcurs in the 60s and
70s set out to establish their own idcntities in an industry
ready for new respiration and ideals.
